
Carl’s beef with Bulawayo
(1) PREPARATION TIME- 15 min;
Cook time-90 min;
Total time-105 min;
Course-main; Servings-8 savings
Ingredients: 1 Full Chicken, Salt and Pepper, 1 Onion, 1 Cup Rosemary, 1 Cup Thyme, 2 Green Peppers, 1 Bunch Oregano, 1 Chicken, Stock Cube 500ml, Water
Instructions: In a deep baking tray season your chicken well with salt and pepper. Roughly chop the peppers onions and tear apart the herbs and throw them around and stuff some inside the chicken cavity.
Pour water to cover a third of your baking tray. Add 2 chicken stock cubes and cover the chicken with foil.
In a pre-heated oven bake the chicken at 180 degrees for 1hr. Remove the foil and baste the chicken with the liquid. Bake the chicken a further 30 minutes without foil before serving.
(2) Free Range Road Chicken
Preparation time-15 min, Cook time-65 min, total time-80 min, Course-Main course, Servings-8 servings
Ingredients: 1kg Road Runner Chicken Pieces, 1 tin chopped tomato, 1 Onion, 2 tablespoons Curry Powder Mild, 1 Chicken Stock Cube, 2 tablespoons Usavi Mix
Instructions: In a large pot on a fire add cooking oil and fry the chicken pieces until they are golden brown.
Chop the onion and add to the chicken pieces mixing well until the onions are translucent, add two tablespoons of curry powder and mix well until the spices are beginning to toast, add the tinned chopped tomato and mix very well.
In a cup pour hot water to dissolve the stock cube and add to the saucepan.
Pour enough water to cover the mixture add a level tablespoon of salt and allow to simmer for 45 minutes.
Mix the Usavi mix with a little water to make a paste and add to the saucepan mixing well and allow to reduce for the next 20 minutes serve with rice or sadza.
